This sticky-sweet pie blends barrel molasses and blackstrap dark molasses for a rich flavor balance. Until you’ve had shoofly pie, you haven’t truly had a taste of Lancaster!

Clyde Weaver’s Pennsylvania shoofly pie is “wet bottom,” indicating a layer of molasses gelled under the cake layer. We prepare and bake each pie to a golden finish in our bakery, with some crumbs on top of the cake layer. Shoofly pie is best served with vanilla ice cream, whipped cream and a cup of coffee.
